[10:27] <Springfield> Today, I won't be showing you a recipe, but showing you one of the tools I've been using throughout most of my cooking demonstrations.
[10:27] <Springfield> The cast-iron skillet.
[10:29] <Springfield> They're heavy, prone to rusting if you don't take care of them, and "crude" compared to modern cookware, but they're arguably superior overall and unique in their results.
[10:31] <Springfield> In the modern world, too many people are so hyperactive and over-stimulated that they're, for one reason or another, unable to slow down and just focus on ONE THING.
[10:31] <Springfield> And that resulted in people forgetting about an ancient and effective form of stress relief...
[10:32] <Springfield> THE ACT OF COOKING.
[10:32] <Springfield> Food tastes better when it's lovingly created and carefully tended. Especially when you're doing it yourself, either FOR yourself or for people you personally care about.
[10:34] <Springfield> Cast-iron skillets are simple, don't make use of all of the modern add-ons (that may not be healthy in the long run), and the unique properties of "seasoning" can
[10:35] <Springfield> ^ can't be replicated in aluminum or steel cookware.
[10:37] <Springfield> Seasoning is easy and very important.
[10:37] * Springfield pulls out a cast-iron skillet to demonstrate.
[10:38] <Springfield> Take your cooking oil (extra-virgin olive oil is best), and slather it inside the cooking surfaces and interior sides.
[10:39] <Springfield> Then, put it on a ignited burner or hot coals to cook the oils in. That bakes on the residue that'll reduce sticking and protect the metal.
[10:40] <Springfield> NEVER clean it with dish soap. Dish soap will break down that oil coating, open the metal up to rust, AND soak into the metal and taint your next meal!
[10:41] <Springfield> If you DO need to clean the skillet, use a stiff brush or steel wool to scrape it clean. In the old days, people used wads of horsetail to scrub their pots.
[10:43] <Springfield> Don't worry about germs. The temperatures needed to cook your food inside the skillet WILL kill those same germs.
[10:44] <Springfield> Never leave it soaking in water. Keep it dry as much as possible. If cared for properly, a cast-iron skillet can last for generations. Take care of it, and it'll take care of you.
