[21:28] <Thirza> As for the corruption code, luck was on her side --- a substance dubbed "Vapaus" was shown to be able to cleanse the corruption from her, but the damage she did still remained.
[21:31] <Thirza> She then proposed a wild idea --- the Raptures' leader resided in a aerial forge, connected to the surface via a space elevator. With the main Rapture forces occupied elsewhere, she wanted to go up and strike.
[21:32] <Thirza> But two problems complicated matters --- first, outing and ridding themselves of the traitor, and second, the elevator was also heavily guarded.
[21:33] <Thirza> Her team got Cindy up there, and in a pitched fight she heavily damaged the Raptures' leader and blew apart the elevator, heavily limiting their forces.
[21:35] <Thirza> However, she was shot out into the uppermost atmosphere of the planet, and crashed somewhere on the surface.
[21:35] <Thirza> It took Abe years to find her, and even more to begin amassing the materials necessary to even do basic repairs.
[21:38] <Thirza> Which is where the really interesting bit comes in --- namely that large timegap between then and now.

[07:29] <WA-2000> Then add the salt. Take extra care to ensure that everything gets mixed together uniformly.

[07:32] <WA-2000> Work the dough with your fingers and keep folding it over itself. Add in little amounts of flour until it stops sticking to the table and your hands.
[07:33] <WA-2000> Round it out with tour hands to make it easier to work with, then start rolling it out with the rolling pin.

[07:35] <WA-2000> Roll it all out into a roughly square shape about half-an-inch thick. Use a pizza cutter if you wish to trim the edges a little.
[07:37] <WA-2000> Then use that sharp object to start poking some holes are intervals in the dough. Poke all the way through. This is to help ensure that it dries out quicker and more thoroughly in the oven.
[07:38] <WA-2000> Lastly, we put them on the cookie sheet or baking platter, put them in the oven, and cook it all at 350 degrees for 30 minutes.
[07:39] <WA-2000> Once they've finished cooking in the over for half an hour, take them out, allow to cool...

[07:21] <WA-2000> Time consuming to make, yes. But it DID create a food that could last for months and in a pinch be eaten raw without any problems!
[07:23] <WA-2000> Note, what I'm going to show you is NOT modern salt pork. It's the REAL stuff from hundreds of years ago.
[07:24] * WA-2000 starts water boiling in a large cauldron and gets a two-gallon wooden keg ready.
[07:26] <WA-2000> It's important that you pack the pork in a non-metallic container. Brine and metal don't really get along.
[07:27] * WA-2000 brings out a huge piece of raw pork shoulder and starts slicing it up into one-pount chunks.
[07:27] <WA-2000> You're going to need salt. Lots and lots of salt.
[07:28] <WA-2000> First, I'm going to pour some salt into the water I've got boiling to create brine. That hot brine will be an important finishing touch.
[07:29] <WA-2000> Next, I'm going to prepare and pack that barrel.
[07:29] <WA-2000> It's gonna get PORKED! >:D
[07:30] * WA-2000 pours a cup of salt into the bottom of the barrel, spreading it evenly on the bottom.
[07:31] * WA-2000 starts putting the sliced pork into the barrel one piece at a time, putting the rind side against the salt and keeping the meat upwards.
[07:32] <WA-2000> You'll want to do it like this to make sure the rind is what gets salted first.
[07:33] <WA-2000> Don't just drop the meat in by hand. Pack it in tightly because you don't want air pockets.
[07:33] <WA-2000> Remember, rind down into the salt, meat upwwards.
[07:34] <WA-2000> Then, when you've got one layer of pork put inside, pour ANOTHER layer of salt on top of it.
[07:35] <WA-2000> Spread it evenly. Once that's done, start putting in another layer of meat. Just like before: rinds down, meat up, and pack it in tightly.
[07:35] <WA-2000> Once that second layer is in there, put in more salt on top of that!
[07:37] <WA-2000> Don't worry about putting in too much salt. You don't want to skrimp.
[07:37] * WA-2000 keeps putting in alternating layers of meat and salt until she's out of meat.
[07:38] <WA-2000> As you can see, this keg is nearly full. Now we're ready for the brine.
[07:38] <WA-2000> Now, there was an 18th-Century trick to figure out if your brine was properly done.
[07:39] * WA-2000 moves the camera over to the cauldron and turns off the heat.
[07:39] *** The liquid soon stops boiling.
[07:40] <WA-2000> Take a regular raw egg and put it in the liquid. Make sure you have enough liquid to do this!
[07:41] <WA-2000> Don't crack the egg or do anything with it. Just see if it floats in the water. If it floats, that means there's enough salt in it.
[07:41] *** The egg does indeed float at the top.
[07:43] <WA-2000> Now we're ready. Take your brine solution, take a ladle, and start pouring it into the keg to cover the meat.
[07:44] <WA-2000> Add the brine right up to the brim. Use a smaller lid or something to press down on the meat to compact it a bit, and use some kind of weight to keep pressure on it.
[07:45] <WA-2000> Make sure it doesn't start frothing. If it does, you'll need to pour the brine solution off, skald it, and then reapply it.
[07:47] <WA-2000> If there's no frothing, then get the actual lid, put it into place, keep a weight on it to maintain pressure. You want to keep a little bit of pressure on the contents.
[07:49] <WA-2000> Make sure it's properly sealed, put the keg in a cool place like a large refrigerator or a root cellar and YOU'RE DONE!
[07:49] <WA-2000> Just leave it!
[07:50] <WA-2000> Over the next few weeks it'll transform into genuine Salt Pork! The REAL stuff!
[07:51] <WA-2000> Under proper conditions, the meat will remain edible for at least several weeks after you take it out of the barrel. Preparing it for eating typically requires soaking.
[07:52] <WA-2000> Typically overnight, or at minimum two hours. Use fresh water and chage it frequently because that fresh water is going to get salty fast.
[07:53] <WA-2000> Even after all that soaking, your pork is going to be salty! But it WILL be edible!
[07:54] <WA-2000> No parasites to worry about. No bacteria because the salt killed it all.
[07:55] <WA-2000> And THAT is how to make Salt Pork in the Old Way!
